Stuffed Mushroom Casserole
I’ve never met a mushroom I didn’t like, and I almost wish I never came across this recipe while scrolling YouTube. Once you start, you’ll find putting the fork down (or spoon, you do you, there is no judgement here) to be difficult, at best, if not impossible.
Side dish or main vegetarian entree you be glad you did. Sayin’.
Here’s what you need:
2 lbs mushrooms (cremini, portabello, etc…)
1 8oz pack of cream cheese, softened
4 garlic cloves, minced
1 onion, diced
2 to 3 springs thyme (or 1 tsp dried)
2 to 3 springs of rosemary (or 1 tsp dried)
1 tsp garlic butter (or season salt)
1 cup panko breadcrumbs
½ cup shredded parmesan
3 TBS butter
1 cup mozzarella, shredded
Chopped parsley for garnish
Chopped green onion for garnish
Here’s what you do:
· Preheat oven to 375F/190C
· Sautee onions in olive oil until golden, 5 to 7 minutes
· Add mushrooms, fresh thyme and rosemary, and cook for 10 minutes or until all the moisture has fully evaporated and the mushrooms are golden in color
· Season with salt and pepper and garlic butter seasoning
· Add cream cheese and stir until mushroom mixture is fully coated
· Remove thyme/rosemary stems if applicable
· Place mixture in an 8x8 baking dish
· Top with Mozzarella cheese
· In separate bowl mix breadcrumbs, parmesan and melted butter.
· Top casserole with topping
· Bake 25 – 30 minutes until brown and bubbly.
NOTES:
This is a really cool “base” casserole without using a can of soup. You can add some hamburger and bell peppers to this and this could quickly become a Philly cheese steak casserole! Or, add a rotisserie chicken and maybe some cooked rice.
Take your time with the onions and the mushrooms. It is very important, especially with the mushrooms, to cook out all liquid. Otherwise, you will have a runny casserole. You might not think it will ever happen, but it will. I promise. I wouldn’t lie to you – I want you to come back after all.
Having a deep dish nonstick skillet is a MUST HAVE here. I highly recommend this one - it is both durable and affordable. You’ll be glad you did!
